Beer Chilli

    This chilli has something to please everyone, beer for the boys and chocolate for the girls. There is a good spice without blowing your head off.

    Serves: 4 

    • 500g beef mince
    • 1 dash sunflower oil, as required
    • 1 large onion, roughly diced
    • 6 cloves of garlic, diced
    • 4 chillies, de-seeded and finely diced
    • 1 (330ml) bottle beer. preferably a larger
    • 200g tomato puree or passata
    • 30cm tomato paste
    • 1 vegetable stock pot
    • 2 squares dark chocolate
    • 1 teaspoon paprika, smoked if available
    • 1 teaspoon cayenne pepper
    • 1 teaspoon salt
    • 1 teaspoon sugar
    • 2 teaspoons ground cumin
    • 2 tablespoons chilli powder
    • 2 teaspoons dried oregano
    • 1/2 lime, juiced
    • 1 (400g) tin kidney beans
    • 12 button mushrooms, quartered
    • 20g corianderm, diced

    1. Brown the mince off in a large saucepan in a little oil.
    2. Sweat the onion in a frying pan until it starts to go translucent then add the garlic and chilli. Fry for a further 2 or 3 minutes. Add the frypan contents to the mince.
    3. Add the beer to the emptied fry pan and stir until the froth dies down then add the tomato puree or passata and tomato paste bringing to the boil. Add the frying pan contents to the saucepan.
    4. Put the chocolate into the saucepan and stir until melted.
    5. Add to the saucepan paprika, cayenne, salt, sugar, cumin, chilli, oregano and lime juice. Stir then simmer for 30 minutes.
    6. Add the kidney beans and mushrooms to the saucepan and simmer for a further 15 minutes.
    7. About 5 minutes from the end of the cooking put the coriander into the pot and stir in.
