Rocky Road Marshmallow Muffins
Eat these amazing muffins while they are still warm to get the gooey chocolate/marshmallow experience.
Ingredients
Serves: 12
- 230g flour
- 1/4 cup (60g) cocoa powder
- 1 tablespoon baking powder
- 1 pinch salt, to taste
- 110g caster sugar
- 100g white chocolate chips
- 60g mini marshmallows
- 1 egg
- 1 cup (250ml) milk
- 6 tablespoons cooking oil

- Sift flour, cocoa, baking powder and salt into a large mixing bowl.
- Stir in sugar, chocolate chips and marshmallows.
- Whisk egg in bowl.
- Pour milk into jug adding cooking oil and egg; hand whisk.
- Make a well in the centre of dry ingredients and pour all the liquid in; combine but do not over-mix.
- Spoon into muffins tins and bake at 200 degrees C for 25 minutes.
