Basic Cheesecake

    Although this is a basic cheese cake it is still loved by all that try it. For additional flavour you can put another layer on top like fresh fruit, chocolate or tinned fruit.

    Serves: 8 

    • Base
    • 150-175g plain sweet biscuits (crushed)
    • 50g hard butter
    • Filling
    • 100g caster sugar
    • 200g cream cheese
    • 200g fromage frais
    • 1 1/4 cups (310ml) thickened cream

    Preparation:30min  ›  Extra time:8hours chilling  ›  Ready in:8hours30min 

    1. Line a 20cm round springform pan with greaseproof paper It will need a deep one.
    2. Base: Melt the butter in a saucepan then stir in crushed biscuits.
    3. Put into prepared pan and press evenly into base. Chill.
    4. Filling: Mix cream cheese and caster sugar together in a bowl.
    5. In another bowl whisk the cream until really thick.
    6. Stir the fromage frais into the cream.
    7. Pour the cream mixture into the cream cheese mixture and fold together until combined.
    8. Spread onto chilled biscuit base and return to refrigerator.
    9. For best results allow 8 hours for the cheesecake to fully set.
