Potato Rosti Patties

    These are a great potato side and simpler that chips, certainly a lot less oil. They can be used as a simple side or the base of a fancy restaurant style stack presentation.

    Serves: 2 

    • 4 potatoes, peeled
    • 1 pinch salt and pepper, to taste

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Grate potatoes then squeeze out excess water.
    2. Add seasoning then form 2 flat patties.
    3. Fry in some oil until brown on both sides.

    I grated my potatoes into a salad spinner full of cool water - triple rinsed them to remove some of the potato starch and then spun them dry. Fry them without moving them until the bottom is nice a crispy and then you can turn them to crisp up the rest. I would add a sprinkle of cayenne pepper or some paprika next. Very tasty.
