Chicken in Red Wine and Tomato Sauce

An easy but tasty Italian-style dish of chicken with mushrooms in red wine and tomato sauce. Great for a weeknight dinner.


Serves: 4 

  • 30g butter
  • 2 tablespoons (40 ml) olive oil
  • 2 onions, sliced
  • 2 cloves garlic, crushed
  • 750g chicken thigh fillets
  • 250g mushrooms, sliced
  • 2 x 410g tins diced tomatoes
  • ¼ cup tomato paste
  • ¼ cup dry red wine
  • 2 teaspoons brown sugar
  • 1 teaspoon cracked black peppercorns
  • ¼ cup chopped fresh basil

  1. Heat butter and oil in pan, add onions and garlic, cook, stirring, until onions are soft.
  2. Add the chicken, cook until tender. Stir in mushrooms, undrained crushed tomatoes, tomato paste, wine, sugar and pepper.
  3. Bring to boil, simmer, uncovered, until sauce has thickened slightly; stir in basil.
  4. Serve with rice or pasta and vegetables, if desired.
