Easy Banana Loaf

    This is a very easy recipe, you don't have to cream the butter and sugar - just melt and mix. I add vanilla, cinnamon and/or nutmeg to mine sometimes.

    Ingredients
    Serves: 8 

    • 125g melted butter
    • 200g sugar
    • 2 cups (250g) flour
    • 2 eggs
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 325g mashed bananas
    • chopped nuts, to taste (optional)

    Directions
    Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

    1. Preheat oven to 180 degrees C.
    2. Mix all ingredients together well. Pour into a greased and floured loaf tin.
    3. Bake in preheated oven until a skewer inserted in centre comes out clean, about 45 minutes-1 hour.

    As a baking novice I made this with gluten free flour for my wife and it turned out brilliant. I added raisons as I didn't have or couldn't find the chopped nuts and I reduced the sugar to 100gms. So simple and tasty - thank you.  -  18 Oct 2013  (Review from Allrecipes UK & Ireland)
