Corned Beef with Beer

    Traditional boiled corned beef with just a touch of beer in the cooking water. I serve with mashed potatoes, boiled cabbage and peas or carrots. This is also great cold on sandwiches with pickles and cheese.

    Serves: 4 

    • 2-2.5kg piece silverside (corned beef)
    • 1 carrot
    • 1 onion
    • 2 Tbsp golden syrup
    • 2-3 bayleaves
    • 12 whole black peppercorns
    • 1 x 375ml can beer

    Preparation:10min  ›  Cook:3hours  ›  Ready in:3hours10min 

    1. Wash the meat in cold water, it makes it less slippery.
    2. Put the silverside into a deep saucepan along with peeled and roughly chopped carrot and onion.
    3. Add golden syrup, peppercorns, bay leaves and the beer.
    4. Top up with cold water, (up to top of meat), bring to boil and simmer for about 2-2.5hrs.
    5. Remember to check the level of water from time to time and top up if required.
    6. Remove silverside from cooking liquid and leave to cool/set for 15 minutes. If you try to carve too early it may shred. Discard cooking water.

    Something else. Instead of serving with mashed potato I served it on a bed of mashed buttenut pumpkin and made a cheese sauce to pour over it  -  10 Aug 2010
