In a medium salad bowl add in the vegetarian mince, egg, parsley, onion, cumin, chilli flakes, curry powder and thyme. Stir together.
Add the breadcrumbs then mix until thoroughly combined. If it is too dry wet it with a few spoons of water; if too soft then add more breadcrumbs.
Preheat the oven to 200 degrees C.
In the palm of your hands make approximately 15 balls from your mixture.
Brush an oven tray or glass baking dish around 5cm deep with oil then place the potatoes, tomatoes, balls and capsicum onto it.
Dissolve the tomato paste in three glasses of water then pour over the oven dish. Drizzle with oil. Cook in the oven until the sauce starts boiling then bring the oven down to 180 degrees C. Cook for an additional 5 minutes.
