Simple Raspberry Jam

    This is a foolproof raspberry jam recipe for all of those who are new to jam making. Four ingredients and a bit of boiling and you are all done.

    Serves: 80 

    • 1 3/4 kg raspberries
    • 2kg caster sugar
    • 3 tablespoons powdered pectin
    • 1 tablespoon unsalted butter

    1. Place the raspberries into a large heavy saucepan and crush them with a potato masher.
    2. Add the sugar and pectin and heat very slowly, stirring all the time until every grain of sugar has dissolved.
    3. Add the butter and increase the heat to bring to a full rolling boil. Boil for exactly 4 minutes.
    4. Remove from the heat and cool for 1 minute then place in jam jars and cover immediately.
