Tofu and Tomato Salad

    An easy summer salad that's quick to prepare and is a complete vegetarian meal. Tofu, tomato, cucumber and kidney beans tossed with salad dressing and basil.

    Serves: 4 

    • 1 tomato, diced
    • 1 cucumber, seeded and diced
    • 1/2 red onion, thinly sliced
    • 1 (400g) tin kidney beans, drained
    • 130g firm tofu, diced
    • handful chopped fresh basil
    • 4 tablespoons salad dressing of choice
    • salt and freshly ground black pepper, to taste

    1. In a large bowl, combine the tomato, cucumber, red onion, kidney beans, tofu and basil. Just before serving, toss with salad dressing then season with salt and pepper.


    This is great with a simple balsamic vinaigrette.

    Fresh and different! My husband loves this! I didn't have kidney beans so I drained the ranch style beans that I had in the pantry and used them.
