Tofu and Tomato Salad

An easy summer salad that's quick to prepare and is a complete vegetarian meal. Tofu, tomato, cucumber and kidney beans tossed with salad dressing and basil.
1 tomato, diced
1 cucumber, seeded and diced
1/2 red onion, thinly sliced
1 (400g) tin kidney beans, drained
130g firm tofu, diced
handful chopped fresh basil
4 tablespoons salad dressing of choice
salt and freshly ground black pepper, to taste
- In a large bowl, combine the tomato, cucumber, red onion, kidney beans, tofu and basil. Just before serving, toss with salad dressing then season with salt and pepper.
This is great with a simple balsamic vinaigrette.
