Beef, Mushroom and Cashew Stew

    35 minutes

I love hearty stews and this one packed with beef, mushrooms, onion, celery and cashew nuts in a sour cream based sauce is great.

    8 people made this

    1. Place the onions, leek, celery and butter into a large saucepan and sauté over a low heat until the onions are transparent.
    2. Add the mushrooms and cook for 2-3 minutes until the juices run. Add the mixed herbs. Stir in the flour and cook for one minute.
    3. Add the stock, cashew nuts and seasoning and cook gently for 8-10 minutes.
    4. Remove from the heat, stir in the sour cream adjusting the seasoning if necessary. Heat very gently to serving temperature. Do not boil.
    5. Garnish with parsley and serve on a bed of rice.
