Easy Carrot Soup with Coriander

Carrots and coriander go together really well especially in this soup. This is a healthy choice for a quick and healthy dinner.


Serves: 2 

  • 1 clove garlic, diced
  • 1 onion, diced
  • 1 litre vegetable stock
  • 700g carrots, grated or diced small
  • 2 teaspoons coriander

Preparation:10min  ›  Cook:35min  ›  Extra time:35min cooling  ›  Ready in:1hour20min 

  1. In a saucepan on medium heat in some oil soften the garlic and onion.
  2. Add stock and carrots then bring to the boil.
  3. Simmer for 15-20 minutes until carrots are cooked.
  4. Add coriander and simmer for a minimum of 15 minutes or add the coriander with the carrots.
  5. Mash everything then bring the soup up to temperature. Serve with additional coriander on the top for decoration.
