    Stroganoff is a stew filled with beef and mushrooms in a rich sour cream sauce. It can be served with white rice, pasta and have green vegetables on the side.

    Ingredients
    Serves: 4 

    • 450g sirloin steak, trimmed and cut into 1cm strips
    • 1 tablespoon olive oil
    • 1 tablespoon butter
    • 1 large onion, thinly sliced
    • 250g mushrooms, sliced
    • 250ml sour cream
    • 1 tablespoon grainy mustard
    • 1 tablespoon flat leaf parsley, diced

    1. Heat oil and butter in a frying pan over medium high heat. Brown the steak strips on all sides then remove from frying pan and set aside. Cover the steak with foil to keep warm.
    2. Add onion to frying pan and saute until soft and translucent. Add mushrooms and butter then cook until all juices have evaporated.
    3. Return the steak to the frying pan. Stir in the sour cream and mustard then heat through.
    4. Sprinkle with parsley and serve.

    This was ok, but fairly bland. Ended up adding garlic, onion powder, salt, black and red peppers. Ok after changes, but wouldn't make again. - 16 May 2013
