Easter Egg Cupcakes

    Easter is a great time to cook with the kids. These are simple cupcakes for Easter that embrace the chocolate theme; chocolate cupcakes, chocolate icing, chocolate mini eggs to decorate.

    Serves: 18 

    • Cakes
    • 140g self raising flour
    • 120g butter, softened
    • 85g caster sugar
    • 2 eggs
    • 2 tablespoons cocoa powder
    • Icing
    • 120g butter, softened
    • 120g icing sugar
    • 100g milk or dark chocolate, melted
    • For Decorating
    • Large bag of mini eggs

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Cakes: Preheat the oven to 190 degrees C. Line 3 mini muffin tins with colourful patty cups.
    2. Weigh out the flour into a large bowl and add the butter, sugar, eggs and cocoa. Mix with an electric hand-beater until smooth.
    3. Spoon the mixture into the patty cups, filling them 3/4 full. Bake for 10 -12 minutes or until the sponge mixture feels firm when you touch it. Remove from the oven and cool.
    4. Icing: Mix the softened butter and sugar together with an electric beater then add the melted chocolate. Be careful not to over beat it.
    5. For Decorating: Spread the icing on top of each cupcake and decorate with 2 or 3 mini chocolate eggs.

    Something else. I made a batch of these and found the sponge to be a bit dry and not chocolatey enough so I made another batch and added 150g of melted plain cooking chocolate and they taste amazing!!  -  14 May 2010  (Review from Allrecipes UK & Ireland)
