Cucumber Vinegar Salad

This is a Norwegian style cucumber salad that doesn't use oil in the dressing. It's very cool and refreshing especially with barbecued fish.
2 cucumbers, peeled and thinly sliced
1/2 red onion, thinly sliced
1 1/2 cups (375ml) water
1/2 cup (125ml) rice wine vinegar
1 teaspoon caster sugar
1/4 teaspoon salt
Extra time:1hour chilling ›
- Combine cucumbers and red onion in a serving bowl.
- In a mixing bowl, stir together water, rice wine vinegar, sugar and salt. Pour over cucumbers. Chill for 1 hour. Serve chilled or at room temperature.
