Great for kids this tasty omelette can use leftover boiled potatoes. This recipe uses corn kernels and peas but you can add anything to this such as bacon and cheese.
30g frozen peas
30g corn kernels
1 pinch black pepper, to taste
2 pre-cooked potatoes
1 tablespoon olive oil, for frying
- In a bowl add the eggs and whisk them. Add the peas and corn kernels and mix up. Season with pepper.
- Slice the cooked potatoes; these will be the base of the omelette. In a frying pan add a little oil and when hot add the sliced potatoes; fry until they start to turn golden.
- When the potatoes are golden pour over the mixture and leave to cook on a low/med heat for about 5-10 minutes. You want the omelette to start cooking on the surface.
- When it has started bubbling on the surface stick it under the grill so the top is cooked and browned. Cut into quarters and serve with salad or couscous.
