Coconut Butter Tea Cake

    This is a simple all butter coconut cake that is wonderful with afternoon tea or coffee. You can sprinkle some extra desiccated coconut on top for aesthetics.

    Serves: 14 

    • 260g butter, softened
    • 200g cream cheese, softened
    • 400g sugar
    • 6 eggs
    • 2 teaspoons vanilla essence
    • 3 cups (375g) plain flour
    • 1/4 teaspoon bicarb soda
    • 1/4 teaspoon salt
    • 200g desiccated coconut

    1. Preheat the oven to 170 degrees C. Grease and flour a 25cm ring tin.
    2. In a mixing bowl, cream butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each. Beat in vanilla.
    3. Combine the flour, bicarb soda and salt in a separate bowl; add to creamed mixture. Fold in coconut. Turn into the prepared tin.
    4. Bake in the preheated oven for 1 hour and 30 minutes or until a skewer inserted near the centre comes out clean. Cool for 10 minutes before removing from tin to a wire rack to cool completely.
