Slow Cooked Chicken

    This is really simple with no need to marinate. Just put all the ingredients in the slow cooker and enjoy the smells throughout the house.

    Serves: 4 

    • 4 chicken breasts or thighs, diced
    • 1 large onion, roughly diced
    • 2 cloves garlic, roughly diced
    • 2 fresh green chillies, diced
    • 1 (400g) tin of tomatoes or tomato puree or passata
    • 300ml water
    • 1 teaspoon ground coriander
    • 1 teaspoon ground cumin
    • 1 or 2 red or green capsicums, roughly diced
    • 1/2 teaspoon chilli powder
    • 2 whole fresh red chillies, optional
    • 2 teaspoons garam masala
    • 2 1/2 teaspoons curry powder

    Preparation:5min  ›  Cook:6hours  ›  Ready in:6hours5min 

    1. Put everything in the slow cooker, stir and put the slow cooker on low for 6 to 8 hrs. Check the chicken is cooked through before serving.

    Nice amount of spice in dish which makes it satisfying for such a low calorie meal.  -  17 Oct 2010


    I loved this dish. The flavours were so good. Will definitely make it again. However I decided to do this recipe on the stove as I know in the slow cooker it would be watery and nothing was said about thickening it, as with all slow cooker recipes it seems. Also spices really should be fried off. I also don't see how 4 chicken thighs can possibly equal 4 chicken breast so giving that choice wasn't good, so I just added 800g chicken breast. I also decided to just add 1/2 teas chilli flakes and less than 1/4 teas chilli powder only. And for me that was plenty hot lol And of the tomato choices, I opted to use the can of tomato Puree. Also used some Brown Rice Flour to thicken it a bit. So all in all a great recipe. Well done ah.1965 on a great recipe, changes aside, which really were minimal. Oh and I also allowed the sauce to simmer about 20 mins before adding the chicken breast so it didn't overcook  -  21 Jul 2014
