    A lovely curry that can be adapted to the required strength. Choose a curry powder that best suits your preferred heat and flavours.

    Serves: 4 

    • 4 chicken breasts, diced or left whole
    • 2 tablespoons oil
    • 1 onion, diced
    • 1 green capsicum, seeded and sliced
    • 2 tablespoons mild curry powder
    • 1 tablespoon plain flour
    • 600ml chicken stock
    • 1 lemon, juiced
    • 1 pinch salt and pepper, to taste

    1. Lightly brown the chicken in the oil then remove from the frypan and keep hot.
    2. Fry the onion and green capsicum in the oil remaining in the frypan until soft. Add the curry powder and flour then cook gently for 2 minutes stirring.
    3. Blend in the stock and lemon juice. Return the chicken to the pan and bring to the boil, stirring well.
    4. Add salt and pepper. Cover and simmer for 45 minutes.
    5. Serve with basmati rice and naan bread.
