Lemon Cheescake

    A rich lemon cheesecake that does not require cooking. Chill until set and serve cold with double cream and fresh fruit.

    Serves: 8 

    • 80g butter
    • 225g dark chocolate biscuits
    • 300g mascarpone cheese
    • 1 (400g) tin condensed milk
    • 3 large lemons, juice and zest
    • 140ml thickened cream

    Preparation:15min  ›  Cook:5min  ›  Extra time:1hour chilling  ›  Ready in:1hour20min 

    1. Melt butter in a saucepan and add crushed biscuits then mix together.
    2. Pour into a cake tin then press into the base and sides to form the cheesecake crust. Chill.
    3. In a bowl add the cheese, condensed milk, lemon juice and zest then beat until combined.
    4. In another bowl whisk the cream until stiff then fold into cheese mixture.
    5. Pour into cake tin and smooth. Keep chilled.

    i have made this twice the first time was brilliant i have just made it for the second time today and it is currently in the fridge and has been since about 1130 and it hasn't set! does anyone no why this could be?
