    This is a simple fruit cake recipe that starts with boiling the main ingredients then adding the flours to finish. Cooked in a bread tin it makes a great loaf.

    Serves: 8 

    • 200g sultanas
    • 1 cup (250ml) milk
    • 200g sugar
    • 125g margarine
    • 2 cups (250g) self raising flour
    • 1 egg
    • 1 teaspoon cinnamon, optional

    1. Preheat the oven to 160 degrees C.
    2. Put sultanas, milk, margarine and sugar in a saucepan, bring to boil stirring all the time. Once it is boiling turn the heat off. Leave to cool for 10 minutes.
    3. Fold in the flour and mix well. Add egg and mix again.
    4. Pour into a greased bread tin and put in a preheated oven for 1 hour.
