Dairy Free Creamy Tomato

    This is a dairy free creamy tomato soup with tofu. It's a snap to make and delicious to vegans and non-vegans alike!

    Serves: 6 

    • 750g tomatoes, diced
    • 1/2 onion, chopped
    • 1 tablespoon olive oil
    • 400g silken (soft) tofu
    • 600g tomato soup (tinned, packet, homemade)
    • salt and freshly ground black pepper to taste
    • chopped fresh basil to garnish

    Preparation:5min  ›  Cook:25min  ›  Ready in:30min 

    1. Sauté tomatoes and onion in olive oil until onions are clear.
    2. Blend the tomato soup and tofu in a blender, then add this blended mixture to the sautéed onions and tomatoes. Warm through and add water as needed. Add salt and pepper to taste, and top with chopped fresh basil.

    ok well i altered this recipe a little bit and it was AMAZING. but if i hadnt altered it it would have been blan. SO i recomend that u add salt, pepper, basil, parsley and oregano to the sauted tomatoes and onion. and i used canned tomatoes so i didnt need to add water becasue the canned tomatoes had so much tomatoe juice. good luck!!  -  19 Feb 2005  (Review from Allrecipes USA and Canada)
