This is a very different way to make a cake using 8 eggs and icing sugar as main ingredients. Perfect for birthday cakes.


Serves: 12 

  • 8 eggs, separated
  • 2 1/4 cups (355g) icing sugar
  • 1 teaspoon vanilla essence
  • 1 lemon, juiced
  • 2 1/4 cups (280g) plain flour

Preparation:20min  ›  Cook:1hour  ›  Ready in:1hour20min 

  1. Place egg yolks and sugar in bowl and mix until nice and smooth. Add vanilla essence and juice from lemon.
  2. In another bowl whisk egg whites to soft peaks.
  3. Add the flour and egg whites slowly into the bowl with yolks and very slowly fold it with a spatula.
  4. Place the batter in a cake tin and cook in the oven for 50-60 minutes at 160 degrees C.
  5. When finished decorate it as desired.
