Spicy Barbecue Chicken Pizza

Delicious spicy pizza. Recipe covers everything you need to know to make a pizza from scratch; base, sauce and topping.


Serves: 4 

  • Base
  • 500g bread flour
  • 300ml warm water
  • 10g dried yeast
  • 1 level tablespoon sugar
  • 1/2 teaspoon salt
  • Marinade
  • 1 tablespoon BBQ sauce
  • 1 tablespoon brown sauce
  • 1 tablespoon tomato sauce
  • 1 tablespoon honey
  • Sauce
  • 1 (400g) tin diced tomatoes
  • 1 small onion, finely diced
  • 2 cloves garlic, minced, crushed or finely diced
  • 2 tablespoons fresh oregano
  • 3 tablespoons olive oil
  • 1 pinch salt and freshly ground black pepper, to taste
  • Topping
  • 200g cooked chicken
  • 80g cheddar cheese, grated
  • 10 black olives, cut in 1/2

  1. Base: Place flour in a large bowl and make a well in the centre. Into the well add the water, yeast, sugar and salt. Incorporate the flour into the water.
  2. When all the water has been mixed into the flour place on a floured board and knead well for approximately 10 minutes.
  3. Cover the dough with a light dusting of flour and place in a bowl covered with a clean cloth; leave in a warm place for approximately 30 minutes or until doubled in size.
  4. To make the marinade; mix together the BBQ sauce, brown sauce, tomato sauce and honey then add the chicken. Place in the fridge until required.
  5. After the dough has risen, knock out the air by kneading once more. Dust a pizza tray with flour and press the dough into the tray.
  6. Cover the dough again with the clean tea towel and leave to rise once more. Approximately 30 minutes.
  7. Sauce: Empty the contents of the tinned tomatoes into a saucepan and heat gently.
  8. Add the onion and garlic then simmer gently until reduced and quite thick. Season well with salt, freshly ground black pepper and oregano.
  9. Remove from heat and add a good olive oil; stir well.
  10. Preheat oven to 180 degrees C.
  11. Once the dough has risen sufficiently gently cover with the thick tomato sauce being careful not to knock the air out of the dough.
  12. Add the marinated chicken, halved olives and finally the grated cheese.
  13. Put into the oven and set the timer for 25 minutes. Pour a glass of wine and relax until ready! or be really efficient and make salad.

Pizza Sauce Tip

Don't overdo the tomato sauce, otherwise the pizza may go soggy. If you have too much sauce (as I normally do with a whole tin of tomatoes) freeze 1/2 of it. It can then be used either for another pizza or as a base for a pasta dish.
