Banana and Sultana Loaf

    This is an easy recipe to make a great banana and sultana loaf. Good use of left over bananas and all the other ingredients will be in the house.

    Serves: 8 

    • 125g butter
    • 1/2 cup (125g) sugar
    • 2 eggs, whisked
    • 3 or 4 bananas (could leave one for end so less mashed)
    • 2 cups (225g) self raising flour
    • 1/2 teaspoon bicarb soda
    • 1 teaspoon cinnamon
    • 1 cup (155g) sultanas

    Preparation:15min  ›  Cook:45min  ›  Extra time:1hour  ›  Ready in:2hours 

    1. Cream together the butter and sugar.
    2. Add the whisked eggs.
    3. Mash 2 or 3 of the bananas and dice up one banana then add to the butter and egg mixture and stir to mix.
    4. Sift and fold in the flour, bicarb soda, cinnamon and sultanas.
    5. Bake in a greased and lined bread tin for 45 minutes at 180 degrees C.

    what good sized loaf this makes and its delicious  -  07 Nov 2011


    made it to have as afternoon tea on a road trip it was very nice I also added some walnuts to it will be making it again soon  -  06 Sep 2015


    ;One thing, the recipe did not state what size loaf tin to cook it in. I used a 1 pound tin and it came out over the sides. I believe that a 2lb loaf tin would have been more suitable. Any guidance appreciated.  -  29 Jul 2012  (Review from Allrecipes UK & Ireland)
