    This is a simple way to cook fish, prawns and seafood sticks with a great result. The rice can be cooked in stock for additional flavour.

    Serves: 4 

    • Seafood Marinade
    • 1 teaspoon salt
    • 1 tablespoon ground black pepper
    • 6 tablespoons diced fresh basil leaves
    • 1 pinch of sugar
    • Baked Seafood
    • 30g butter
    • 5 cloves garlic, crushed
    • 8 button mushrooms
    • 200g rice, washed, drained
    • 1 pinch salt and white pepper, to taste
    • 30ml olive oil
    • 1 kg John Dory fillets, cut in half
    • 300g large prawns
    • 6 seafood sticks, cut into cubes
    • 100g cheese, grated, Mozarella or cheddar

    1. Marinade fish, prawns and crab sticks with salt, pepper, basil and sugar. Set aside for 1 hour.
    2. Heat a wok with butter, saute garlic and button mushrooms until fragrant.
    3. Add rice stirring 5 minutes. Pour into rice cooker along with salt, pepper and water to cook according to manufacturer's instructions.
    4. Prepare a baking dish by coating it with some olive oil.
    5. Scoop cooked rice into the baking dish. Arrange fish, prawns and seafood sticks on the rice. Sprinkle some olive oil. Top up with grated cheese.
    6. Bake in the oven at 180 degrees C for 10 to 20 minutes. Serve immediately.
