Corn Chowder with Bacon

This is a wonderful creamy corn soup that is great served with or in a bread roll. I like the bacon, everything is better with bacon.

Ingredients
Serves: 4
- 1 large onion, diced
- 1 clove garlic, crushed
- 4 rashers bacon, diced
- 60g butter
- 1 tablespoon flour
- 1 litre chicken stock, hot
- 350g corn kernels
- 1 large potato, cubed
- 60ml thickened cream

- In a large saucepan gently cook onion, garlic and bacon for 4 to 5 minutes until soft.
- Melt in the butter then stir in the flour and cook out for 1 to 2 minutes.
- Gradually add hot chicken stock then bring to the boil; simmer for 5 minutes.
- Add corn kernels and potatoes. Season with salt and pepper then simmer for 20 minutes.
- Add the cream. Blend half of the soup in a blender or with an immersion blender, return to the saucepan, serve.

This recipe is amazing, I had some frozen picked crab meat that I added in to make it a crab and corn chowder...my family was fighting over the leftovers! - 15 May 2013
