Corn Chowder with Bacon

    This is a wonderful creamy corn soup that is great served with or in a bread roll. I like the bacon, everything is better with bacon.

    Serves: 4 

    • 1 large onion, diced
    • 1 clove garlic, crushed
    • 4 rashers bacon, diced
    • 60g butter
    • 1 tablespoon flour
    • 1 litre chicken stock, hot
    • 350g corn kernels
    • 1 large potato, cubed
    • 60ml thickened cream

    Preparation:10min  ›  Cook:35min  ›  Ready in:45min 

    1. In a large saucepan gently cook onion, garlic and bacon for 4 to 5 minutes until soft.
    2. Melt in the butter then stir in the flour and cook out for 1 to 2 minutes.
    3. Gradually add hot chicken stock then bring to the boil; simmer for 5 minutes.
    4. Add corn kernels and potatoes. Season with salt and pepper then simmer for 20 minutes.
    5. Add the cream. Blend half of the soup in a blender or with an immersion blender, return to the saucepan, serve.

    This recipe is amazing, I had some frozen picked crab meat that I added in to make it a crab and corn family was fighting over the leftovers!  -  15 May 2013
