Potato and Egg Salad

    What is potato salad without eggs? This is a great recipe that embraces everything potato salad and egg.

    Serves: 6 

    • 8 potatoes
    • 4 large eggs
    • 1 bunch spring onions, diced
    • 2 teaspoons salt
    • 2 teaspoons pepper
    • 2 teaspoons white vinegar
    • 4 tablespoons mayonnaise

    1. Peel potatoes and cut into bite size pieces then place in a saucepan and boil. Place eggs in saucepan with potatoes and cook until hardboiled.
    2. Once potatoes are soft but not falling apart drain with eggs and run under cold water to cool down.
    3. Remove the shell form the eggs and dice. Place them in a bowl with potatoes and spring onions.
    4. Add salt, pepper, white vinegar and mayonnaise (if you want to add more you can). Mix all the ingredients together and it's ready to serve.

    Simple and delicious! There's nothing like a good old-fashioned potato salad to compliment a bbq meal. I did cut back on the salt and pepper, used a bit more mayo and white wine vinegar.  -  09 May 2013
