Creamy Tuna and Mushroom Pasta

    This is a big hit with the kids and is easy to make. It can be finished off in a casserole dish in the oven with some cheese on it, perfect way to keep ready until needed.

    Serves: 4 

    • 1 (425g) tin of tuna in oil
    • 4 spring onions, diced
    • 125g cream cheese
    • 2 tablespoons lemon juice
    • 4 tablespoons plain yoghurt
    • 200g corn kernels
    • 1 pinch ground black pepper, to taste
    • 100g mushrooms, sliced
    • 250g pasta, bows or shells, cooked

    1. Open the tin of tuna and drain oil. Reserve oil and tuna.
    2. In a frypan use the tuna oil to sauté spring onions and mushrooms; 3 minutes. Add the cream cheese stirring to coat the onion and mushroom.
    3. Add the yoghurt and lemon juice stirring over a low heat.
    4. Add the corn kernels and drained tuna, Stir until all ingredients are combined. Season with the black pepper.
    5. Combine the pasta with the tuna sauce and continue to cook until the pasta is heated through then serve.

    This recipe is quick, easy and a healthier option to my usual butter rich 'mornay-style' pasta sauce as we used light cream cheese. We have even forwarded the recipe on to my dad!  -  20 Aug 2013
