    This is a simple but refreshing salad ideal with BBQ chicken. It can also be made with butter beans or chickpeas.

    Serves: 6 

    • 1 (400g) tin cannellini beans, drained
    • 2 oranges, peeled and segmented
    • 1/2 cucumber, diced
    • 2 medium tomatoes, deseeded and diced
    • 1 green capsicum, deseeded and diced
    • 3 tablespoons olive oil
    • 1 tablespoon sherry vinegar
    • 1 pinch salt and black pepper, to taste
    • 1 pinch of cinnamon

    1. Place the beans, orange segments, cucumber, tomatoes and capsicum into a large serving bowl.
    2. Whisk together the oil and vinegar then season with salt and pepper to taste.
    3. Pour the dressing over the salad and toss gently.
    4. Sprinkle with a little cinnamon to serve.
