Chicken and Capsicum

    This colourful dish is full of rich Spanish flavours. It can be served with rice, pasta, salad or fresh vegetables.

    Serves: 4 

    • 2 red capsicums
    • 2 green capsicums
    • 2 yellow capsicums
    • 4 tablespoons olive oil
    • 4 garlic cloves, diced
    • 4 chicken pieces, of your choice
    • 50g ham
    • 250g tomatoes, diced
    • 250ml white wine
    • 1 pinch salt and pepper, to taste

    1. Preheat the oven grill to high. Halve the capsicums and cook under the grill for 20 minutes.
    2. Place the capsicums in a bowl and cover with plastic wrap then leave to cool. When cooled remove the seeds and skin. Cut into slices.
    3. Heat the oil in a large frypan and cook the garlic for a minute. Remove and reserve.
    4. Add the chicken and ham to the frypan then cook until the chicken is golden brown.
    5. Add the tomatoes, wine, reserved garlic, the sliced peppers, salt and pepper.
    6. Cover and cook over a low heat for 45 minutes or until the chicken is cooked.

    When i read this recipe, I was drooling. The only thing missing for a true Spanish touch, I thought, was capers and olives - both black and green. Boy was I right ! This is a keeper !  -  31 Oct 2011
