Pancakes with Sauteed Apples

These are thick, delicious pancakes. The chunky apples on top makes them perfect for all occasions. The cinnamon in both the pancakes and apples is a good common factor.


Serves: 3 

  • Pancakes
  • 2 cups (250g) self raising flour
  • 4 tablespoons caster sugar
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 450ml milk
  • 2 eggs, whisked
  • 3 tablespoons melted butter
  • Sauteed Apples
  • 3 tablespoons butter
  • 4 apples, peeled, cored and sliced into 1 cm slices
  • 1 1/2 teaspoon cornflour
  • 6 tablespoons water
  • 6 tablespoons light brown sugar
  • 1/2 teaspoon ground cinnamon

  1. Pancakes: In a large bowl sift together the flour, sugar, cinnamon, baking powder and salt.
  2. Make a well in the centre and pour in the milk, eggs and melted butter. Mix together until just smooth; some lumps are ok.
  3. Heat a frypan and add a tablespoon of vegetable oil over medium heat. Pour a ladle full of the batter (roughly 60ml) into the frypan and let cook until small bubbles start to form all over the pancake and the edges colour slightly. Flip the pancake and brown the other side.
  4. Transfer the pancakes to a plate and cover in foil to keep warm.
  5. Sauteed Apples: In the same frypan melt the butter over medium heat.
  6. Add in the apples and saute for 3 to 5 mins or until just soft.
  7. Add the cornflour to the water and dissolve. Add cornflour mixture into the apples followed by the sugar and cinnamon.
  8. Let apples simmer for about 2 minutes stirring occasionally. Take off the heat and serve warm over the pancakes.
