Easy Strawberry Jam

    Simple and easy strawberry jam recipe that uses fresh strawberries, powdered pectin and a dob of butter. This is great on toast, sandwiches and scones. Enjoy.

    Serves: 80 

    • 1 3/4 kg strawberries, hulled (green leaves and stems removed)
    • 2 kg caster sugar
    • 6 teaspoons powdered pectin (jamsetta)
    • 1 tablespoon unsalted butter

    1. Place the strawberries into a large, heavy saucepan and crush them with a potato masher.
    2. Add the sugar and pectin and heat very slowly, stirring all the time until every grain of sugar has dissolved. Add the butter, increase the heat, bring to a full rolling boil and boil for exactly 4 minutes.
    3. Remove from the heat, cool for 1 minute then spoon in jam jars and put the lids on immediately.
