Cranberry Orange Coleslaw

    Cranberries and oranges add a tartness and beautiful colour to this change from the usual coleslaw.

    Serves: 10 

    • 100g cranberries, halved
    • 50g caster sugar
    • 2 oranges, peeled and thinly sliced
    • 1 red onion, thinly sliced
    • 275g shredded cabbage
    • 1 large apple - peeled, cored and chopped
    • 4 tablespoons mayonnaise

    1. In a small bowl, toss together the cranberries and sugar. Cover and refrigerate.
    2. In a large bowl, toss together the oranges, onion, cabbage, apple and mayonnaise until evenly coated. When ready to serve, add cranberry mixture and toss again.

    Used different ingredients. People can't get enough of this salad. No matter how much we make, people finish it off. With no fresh cranberries, we use dried. We also add a good splash of white wine vinegar for a litle pizzazz. Make sure the cabbage is just one of the ingredients, not a major player.  -  29 Sep 2008


    Used different ingredients. This was a delicious change to coleslaw or cabbage salad. I used dried orange-flavoured cranberries instead of the sugared cranberries and I think it worked well. I think I will use canned drained mandarin oranges next time. I made this for a Mother's Day supper and everyone loved it!  -  29 Sep 2008


    Zing! I made this for a Christmas potluck dinner last night. Came home with an empty bowl. The cranberries really liven up the cole slaw while the apples balance out their tartness. It's a winner!  -  29 Sep 2008
