Carrot and Apple Cake (Diabetic)

    Sinfully delicious and sugar free for carrot cake lovers. Also contains apples, walnuts, carrot, raisins and orange juice. The sweetness comes from the fruit and vegetables.

    Serves: 8 

    • 2 cups self raising flour
    • 125g margarine
    • 1 teaspoon cinnamon
    • 1 cup walnuts; chopped
    • 2/3 cup raisins
    • 2 cups dessert apples, peeled and sliced
    • 1 cup carrot, grated
    • 1 orange, zested
    • 2 large eggs
    • 4 tablespoons orange juice

    1. Preheat the oven to 180 degrees C. Line the base and grease of a loaf tin with 4 cup capacity.
    2. Place the flour in a bowl and mix well, then cut or rub in the margarine and stir in cinnamon.
    3. Stir in the walnuts, raisins, apples and carrot. Add the orange zest, eggs and juice, then beat well until thoroughly combined.
    4. Spoon the mixture into the prepared cake tin, smooth the top and bake for about 1 hour 15 minutes or until the cake is well risen and firm to touch.
    5. Let cool a little in the cake tin, then turn out on a wire rack.

    I haven´t made this yet. But I want to confirm that there is no sweetener at all in this recipe.  -  20 Apr 2012


    its a diabetic recipe, no sugar should be added. the apple and orange should be sufficient to sweeten it.  -  22 Oct 2014


    Needs some sweetener. Tastes like sugar is missing. Don't recommend this recipe  -  10 Aug 2014
