    Butter, lemon and garlic make a great sauce for the prawns in this deliciously different salad. Perfect as a side dish or a light lunch on its own.

    Serves: 3 

    • 500g medium prawns - peeled and deveined
    • 2 tablespoons butter
    • 2 lemons, juiced
    • 2 heads butter lettuce
    • 2 tomatoes, chopped
    • 1 avocado - peeled, pitted and diced
    • 2 stalks celery, chopped
    • 1 cucumber, cleaned and chopped
    • 1/2 cup grated carrots
    • 1/3 cup (85ml) vinaigrette salad dressing

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. In a large saute pan melt butter over medium heat. Add the prawns and lemon juice, cook until prawns just turn pink. Remove from heat and drain.
    2. In a large bowl tear lettuce into bite-size pieces, add the tomatoes, avocado, celery, cucumber, carrots and cooked prawns, toss to combine. Top with your favourite dressing or vinaigrette.

    So enjoyed this, I don't usually make a salad for a main meal but this was so easy and so very tasty. I didn't use the avocado but that is just personal taste and used some French dressing.  -  08 Dec 2012
