Quick Raspberry Vinaigrette

    This is an easy way to make a delicious salad dressing that keeps well in the refrigerator. You can use frozen fruit, or substitute strawberries for raspberries.

    Serves: 12 

    • 1/2 cup fresh raspberries
    • 1 cup (250ml) extra virgin olive oil
    • 2 tablespoons balsamic vinegar, or to taste

    1. Place the raspberries, olive oil and balsamic vinegar in a blender. Cover and blend until smooth, about 1 minute. Refrigerate until ready to use. Stir or shake before using.
