    This is a simple vegetarian slow cooker recipe that is also gluten free. It is super easy and you can add more vegetables if you want.

    Ingredients
    Serves: 10 

    • 1 cup uncooked long grain brown rice
    • 1 cup dry lentils
    • 1 cup diced carrots
    • 1/2 cup diced celery
    • 1 onion, diced
    • 4 cups (2 litres) water
    • 4 cup (250ml) vegetable stock
    • 1 teaspoon garlic powder
    • 1/2 teaspoon ground black pepper
    • 1 teaspoon salt
    • 2 teaspoons Italian herb mix
    • 1 cup sliced fresh mushrooms

    1. Place the rice, lentils, carrots, celery, onion, water, vegetable stock, garlic powder, ground black pepper and salt in a slow cooker.
    2. Cover and cook on low setting for 7 to 8 hours. Stir in the mushrooms 1 hour before serving.
