    The spices and mixed peel - an ingredient often found in hot cross buns - produces a wonderfully flavourful fruit loaf. This is easy in the bread machine.

    Ingredients
    Serves: 12 

    • 1 cup (250ml) water
    • 1 egg, beaten
    • 2 tablespoons powdered milk
    • 2 tablespoons honey
    • 2 tablespoons margarine
    • 1 1/2 teaspoons salt
    • 3 cups (375g) plain flour
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground nutmeg
    • 1 teaspoon ground ginger
    • 1/2 teaspoon ground allspice
    • 1/2 teaspoon ground cardamom
    • 1 1/4 teaspoons dry yeast
    • 1/2 cup (90g) raisins
    • 1/2 cup (90g) mixed fruit peel

    Directions
    Preparation:5min  ›  Cook:3hours  ›  Ready in:3hours5min 

    1. Place ingredients in bread machine in the order suggested by your manufacturer.
    2. Select sweet bread setting. Add the raisins and mixed peel when the machine beeps, or 5 minutes before kneading is complete.

    It comes out really well, excellant taste and trexture. But I had to cut the salt back to just one tsp and put in 2 of sugar.  -  08 Jul 2013

    The whole family loves this bread. It's fool proof, so easy to make and really great to change it up a bit. I add extras like pecans, cherries, cranberries, walnuts, whatever is in my cupboard really and it turns out amazing. I also use maple syrup sometimes if I have no honey and use whole wheat flour in place of the all-purpose- for extra fibre. Thanks for fantastic recipe.
