Almond and Pine Nut Biscuits

    37 minutes

These macaroons are made with marzipan instead of the usual coconut and are rolled in pine nuts for a crunchy shell.

    8 people made this

    Serves: 60

    • 500g marzipan
    • 1 1/4 cups (280g) white sugar
    • 4 egg whites
    • 4 cups (625g) pine nuts

    Preparation:20min  ›  Cook:17min  ›  Ready in:37min

    1. Preheat oven to 180 degrees C. Grease baking trays.
    2. Break marzipan into pieces and mix together with sugar, using your hands to crumble paste. In a separate bowl, separate the eggs and beat the whites into soft peaks. Slowly add to marzipan mixture and mix until just blended.
    3. Place pine nuts in a bowl. Roll dough into 3cm balls and press into nuts. Coat evenly and place on baking trays about 3cm apart.
    4. Bake 15 to 17 minutes, until lightly golden. Let cool on baking trays for 5 minutes, then transfer to racks.

My grandma makes these all the time. They are the best. The dough supposed to be wet and it kind of looks wrong but thats the way it supposed to be.  -  29 Mar 2008  (Review from Allrecipes USA and Canada)

I grew up with these cookies at every christmas, they have always been my favorite cookies, ive only just started to bake them myself but they are very easy to make. I buy my pine nuts at warehouse stores (like BJ's) and my almond paste from a local bakery together this lowers the price almost in half.  -  28 Dec 2006  (Review from Allrecipes USA and Canada)
