    These macaroons are made with marzipan instead of the usual coconut and are rolled in pine nuts for a crunchy shell.

    Serves: 60 

    • 500g marzipan
    • 1 1/4 cups (280g) white sugar
    • 4 egg whites
    • 4 cups (625g) pine nuts

    1. Preheat oven to 180 degrees C. Grease baking trays.
    2. Break marzipan into pieces and mix together with sugar, using your hands to crumble paste. In a separate bowl, separate the eggs and beat the whites into soft peaks. Slowly add to marzipan mixture and mix until just blended.
    3. Place pine nuts in a bowl. Roll dough into 3cm balls and press into nuts. Coat evenly and place on baking trays about 3cm apart.
    4. Bake 15 to 17 minutes, until lightly golden. Let cool on baking trays for 5 minutes, then transfer to racks.
