Peanut Butter and Cherry Balls

    These are a great sweet treat; filled with peanut butter, chocolate, coconut, cherries and walnuts. Make sure you eat a few yourself before offering them to the kids.

    Ingredients
    Serves: 48 

    • 4 tablespoons butter
    • 2 cups (310g) icing sugar
    • 1 cup (90g) desiccated coconut
    • 1 cup chopped walnuts
    • 2/3 cup peanut butter
    • 1/2 cup glace cherries, diced
    • 2 1/4 cups dark chocolate chips
    • 1 cup desiccated coconut

    Directions
    Preparation:25min  ›  Cook:5min  ›  Ready in:30min 

    1. Melt butter over low heat. Remove from heat and mix melted butter, icing sugar, coconut, walnuts, peanut butter and cherries. Form into small balls. Chill until firm.
    2. Melt chocolate chips over low heat. Stick a toothpick into each ball and dip into chocolate. Roll chocolate covered peanut butter balls in coconut to coat. Chill.

    I placed the peanut butter mixture in the freezer and let it solidify. I used a Tbsp scoop to form the balls, then used chopsticks to dip them in the chocolate. This made it easy and minimized the mess.  -  23 Dec 2008  (Review from Allrecipes USA and Canada)

    this recipe is just awesome, I cant keep them long enough on the tray! Usually my son doesnt like sweet stuff but he always wants one of these. They are rich but very good, also looks very professional so great for bake sales too. When I make this I make it X4 (big family), so I added one less cup of confectioners sugar and they were just right. I made the balls bigger then what the recipe called (about the size of a small plum). and I added a bit more cherries and less walnuts and they were just awesome  -  10 Mar 2004  (Review from Allrecipes USA and Canada)
