Tortilla Eggs

    A quick and easy egg dish. It contains the unusual ingredient of the tortillas being in the egg, rather than the egg being on the torillas.

    Serves: 4 

    • 6 eggs
    • 1/4 cup (65ml) milk
    • 3 (15cm) corn tortillas, coarsely diced
    • 1 tablespoon butter
    • 1 tablespoon diced spring onion
    • 1/2 cup diced cooked ham
    • 1 pinch salt and pepper, to taste

    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. In a bowl whisk eggs and milk together. Soak tortilla pieces in egg mixture for 5 to 10 minutes..
    2. Meanwhile heat butter in a frypan over medium heat. Saute spring onion and ham until onion is soft; about 5 minutes
    3. Pour egg mixture into frypan and cook over medium/low heat until eggs are set.

    I have been making these for years, as my husband is Mexican. We break the corn tortillas into chuncks and fry in a bit of veg. oil till a little crispy, then add egg mixture and cook until eggs are done, flipping once. We use all sorts of leftovers to make this, hot dogs, chorizo, sausage and bacon. My husband even tried it with leftover pizza leaving out the corn tortillas, the crust subbed for that and it was very good!  -  11 Apr 2008  (Review from Allrecipes USA and Canada)


    BismillahirRahmanirRahim This was great! I left out the onion and ham, and added some pepperjack cheese and salsa and a dash of chili powder and it was nuts.
