    Lassi is a common Indian yoghurt drink; this is a version of one of the more common ones with mango and mint.

    Serves: 3 

    • 1 large mango, peeled, seeded and diced
    • 3 tablespoons brown sugar
    • 2 tablespoons diced fresh mint
    • 1 teaspoon freshly ground star anise
    • 1 teaspoon freshly ground cardamom
    • 1 tablespoon lime juice
    • 2 cups (500ml) plain yoghurt
    • 3 sprigs fresh mint for garnish

    1. Blend the mango, brown sugar, mint, star anise, cardamom, lime juice and yoghurt in a blender on high speed until smooth.
    2. Pour into glasses and garnish with fresh mint sprigs to serve.
