Mango and Cashew Salad

    This is a recipe we created one night when we wanted a salad for dinner but were all out of standard salad ingredients.

    Serves: 6 

    • 1 mango - peeled, seeded and cubed
    • 1 Granny Smith apple - peeled, cored and diced
    • 3/4 cup toasted cashews
    • 1 tablespoon balsamic vinegar
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground ginger
    • 1 pinch salt, to taste

    1. In a medium bowl toss together mango, apple, cashews, balsamic vinegar, cinnamon, ginger and salt. Serve.

    Because I love mangos, apples and cashews this makes a not bad side salad. Next time I might just use lime juice instead of vinegar. The vinegar makes the cashews lose their crunch after sitting for awhile.  -  28 Jan 2004  (Review from Allrecipes USA and Canada)

    Unique and delicious! The balsamic vinegar accentuates the natural sweetness of the fruit and keeps this salad from being too artificially sweet.
