Beef and Mixed Vegetable Soup

This hearty soup is great on a cold winter's day. Packed with beef and vegetables it can be served with homemade bread to make a full meal.


Serves: 10 

  • 500g beef mince
  • 1 onion, diced
  • 6 red potatoes, finely diced
  • 5 carrots, thinly sliced
  • 1/2 cup (125ml) water
  • 1 (400g) tin whole kernel corn, drained
  • 2 cups frozen green beans
  • 6 cups (1500ml) tomato-vegetable juice
  • 1 cup (250ml) water
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

  1. In a large saucepan over medium heat cook beef, onion and potatoes covered until beef is no longer pink and potatoes are tender; 10 to 15 minutes.
  2. Meanwhile; place carrots and water in a microwave safe bowl and microwave on high 5 minutes; until tender.
  3. Drain beef mixture and return to saucepan with carrots, corn, green beans, juice, water, salt and pepper.
  4. Simmer over low heat 30 minutes until flavours are well blended and soup is hot.
