    Fried zucchini is given an extra crunch with this simple-to-prepare polenta coating. A perfect side dish for meat eaters and vegans alike.

    Ingredients
    Serves: 4 

    • 2 zucchini, quartered and sliced
    • 1 onion, sliced into rings
    • 1/2 cup (60g) plain flour
    • 1/2 cup (60g) polenta
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 1/4 teaspoon garlic powder
    • 1 cup vegetable oil for frying

    Directions
    Preparation:30min  ›  Cook:20min  ›  Ready in:50min 

    1. Place zucchini and onions in a medium bowl and mix together.
    2. In a small bowl mix flour, polenta, salt, pepper and garlic powder.
    3. Pour dry mixture over zucchini/onion mixture, cover bowl and shake well. Let mixture sit for about 30 minutes; a batter will form on the vegetables.
    4. In a medium frypan heat oil over medium heat. When oil is hot add breaded vegetables and fry, turning them to brown evenly on all sides.

    This is a really tasty recipe. Very quick to prepare and great flavours! Had to add a small splash of water to get the polenta to crust up properly, but that was just my zucchini's I think.  -  05 Jun 2012

    This is an excellent recipie. Even my son who does'nt like zuchinni said so. I did increase the salt in it. Also I used one zuchinni and one yellow squash. Easy, fast and delicious. Thanks.  -  17 Aug 2002  (Review from Allrecipes USA and Canada)

    I was not impressed with this at all. The *batter* never really formed on my zucchini. And it ended up coming out very bland tasting. I will stick to my traditional way of doing fried zucchini -- slice the zucchini, dip in flour, dip in eggwash, dip in flour again, salt and pepper and fry.  -  22 Apr 2003  (Review from Allrecipes USA and Canada)
