    Pancakes can be gluten-free and sugar-free and still have a fluffy consistency and taste comparable to those made with wheat flour. You can find xanthan gum at the supermarket.

    Ingredients
    Serves: 10 

    • 1 cup (125g) rice flour
    • 3 tablespoons tapioca starch
    • 1/3 cup (40g) potato flour
    • 4 tablespoons powdered milk
    • 1 packet (1g) artificial sweetener
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon bicarb soda
    • 1/2 teaspoon salt
    • 1/2 teaspoon xanthan gum
    • 2 eggs
    • 3 tablespoons canola oil
    • 2 cups (500ml) water

    1. In a bowl, mix or sift together the rice flour, tapioca starch, potato flour, powdered milk, artificial sweetener, baking powder, bicarb soda, salt and xanthan gum. Stir in eggs, water and oil until well blended and few lumps remain.
    2. Heat a large, well-oiled frypan or griddle over medium high heat. Spoon batter onto frypan and cook until bubbles begin to form. Flip, and continue cooking until golden brown on bottom. Serve immediately with condiments of your choice.
