These simple-to-make mints make great Christmas gifts. If stored in airtight container, these can be frozen for a couple of months.
90g cream cheese, softened
1 tablespoon butter, softened
3 cups (470g) icing sugar
2 drops peppermint essence
1 drop any colour food colouring
- In a large bowl, combine cream cheese, butter, and icing sugar. Mix in peppermint essence. Colour as desired with food colouring, or leave white.
- Roll mixture into small balls, and place on greaseproof paper. Flatten with a fork dipped in icing sugar. Let dry for about 2 hours, then freeze or refrigerate.
